Strawberry Cheesecake Quesadillas

A quick,  creamy, crispy dessert filled with sweet  strawberries, silky  cheesecake filling, and a golden tortilla shell. Perfect for snacks, parties, or a fun twist on classic quesadillas!

Ingredients

Cheesecake Filling

  • 6 oz cream cheese, softened

  • 2 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

Strawberry Layer

  • ½ cup fresh strawberries, diced

  • 1 tablespoon sugar

  • ½ teaspoon lemon juice (optional, but brightens flavor)

Quesadillas

  • 2 large flour tortillas

  • 2–3 tablespoons butter (for frying)

  • 1–2 tablespoons granulated sugar

  • ½ teaspoon cinnamon (optional)

Optional Toppings

  • Whipped cream

  • Powdered sugar

  • Strawberry syrup

  • Ice cream

Instructions

1. Make the Cheesecake Filling

In a bowl, mix:

  • Cream cheese

  • Powdered sugar

  • Vanilla extract

Beat until smooth and creamy.

2. Prepare the Strawberry Filling

In a small bowl, mix:

  • Diced strawberries

  • Sugar

  • Lemon juice

Let sit for 5 minutes to release juices.

3. Assemble the Quesadillas

Lay out the tortillas.
On one half, spread a thick layer of cheesecake filling.
Spoon strawberries over the cream layer
Fold the tortilla in half like a quesadilla.

4. Cook Until Golden

Heat a skillet over medium heat.
Melt butter and place quesadillas in the pan.
Cook 2–3 minutes per side, until:

  • Golden

  • Crispy

  • Slightly caramelized

Remove from heat and sprinkle with cinnamon sugar (optional).

5. Serve

Slice into wedges.
Top with:

  • Whipped cream

  • Powdered sugar

  • Strawberry syrup
    Or enjoy plain—they’re delicious either way!

  • Total: 15 minutes

Tips

Freeze tortillas for 2 minutes so they hold shape better.
 Add sliced bananas for a “strawberry banana cheesecake” flavor.
 Want extra crunch? Use crushed graham crackers inside the quesadilla.
 Use low heat so the tortilla caramelizes without burning.
 Add chocolate chips for a chocolate-strawberry version.
